Defensive shooting and physical stats

I seem to be notcing that my defensemen on my main line are taking alot more shots than the forwards with better scoring infront of them. If I want a defensemen who mainly passes the puck into forwards should I aim for someone with lower SC and higher PA? They seem to automatically be choosing to shot instead of passing to someone who has a better chance to score as such Mark Streit for example has lots of shots and no accuracy while my forwards are low on shots.

Also does players physical statistics have any effect on the game height / weight ? Anton Volchenkov appears to be alot better at scoring than his 55 SC would suggest he should be.
