The league that I am in is in the process of changing from version 1.5 to version 2.1. I haven't been able to find the differences between these two versions in how it actually sims, but I also was curious as to the differences between version 2.1 and both of the newer versions: 2.3 and 3.2. Can someone explain the differences in each of these versions?

You are mistaking the simulation engine version from the software version. All STHS software version have the same simulation engine, 1.1, 1.5, 2.0 and 2.1. If you want to know the difference between the simulation engine, please look at the manuel.
