How can I retire a player from the league?

If I 'erase' the player, are they totally gone, or does their legacy remain?

You simply erase the players. If by legagy, you mean record, they last even if the players is erase.

... and how do you 'unretire' a player?

Retired players via the STHS are removed from a team, send to the unassigned and rename to add the (Retired) mention at the end of their name. If you want to 'unretire' a player, simply rename him and assign him to a teams.
